1/ Interview the IT security"expert" using good old English Engineering Language!
2/ Retrain him,her or reassign to janitorial duties.

Really if your site is hacked like this, its just like whinging that your car was stolen when you left the keys in.
3/ Have suitable legal warning on your site, and then strike back without mercy. My warning:

Unauthorised attempts to defeat or circumvent security features, to use the system for other than intended purposes, to deny service to authorized users, to access, obtain, alter, damage, or destroy information, or otherwise to interfere with the system or its operation is prohibited.
Person or persons attempting to do so agree to enter into an abusive relationship with the site owners, with the Owner as the ABUSER and the wannabee intruder as the ABUSEE.
Furthermore the unauthorised user agrees to undertake "hacking games" with this site owner, where the object of the "game" is to upload programs and /or software to obtain root access and overwrite any data on the computer, including the operation system at the complete discression of the owner of this site.
The damage that may be inflicted is entirely at the discression of this site's owner and how he feels at the time!
The unauthorised user will not hold the site owner responsible for any damage to his/her system and agrees that his unauthorised access is entirely at his/her own risk, and that he agreees to these terms, and than no further warnings may be given.

Any or all uses of this system and all files on this system may be intercepted, monitored, recorded, copied, audited, inspected, and disclosed to any site, law enforcement personnel, as well as officials of other agencies, both domestic and foreign. By using this system, the user consents to such interception, monitoring, recording, copying, auditing, inspection, and disclosure at the discretion of the site owner.
